Aloo Katli recipe is a simple, quick and healthy curry recipe. It is basically served with Chapati, Parantha or it can also be served as a side dish with Rice. It is prepared with few ingredients- we just need potatoes and few spices to prepare it. It tastes so good that you can even have these Aloo Katli as a snack. It can also be prepared during fasting (Vrat) days, just replace its salt with Sendha Namak. Here is the recipe with step by step instructions, pictures & tips.

Ingredients for making Aloo Katli:
 4 Potato
 2 tbsp Mustard OilYon can use any oil.
 1 tsp Cumin Seeds
 ½ tsp Mustard Seeds
 1 pinch Asafoetida (Heeng)
 ½ tsp Turmeric Powder
 ½ tsp Kashmiri Red Chili Powder
 ½ tsp Dried Mango Powder (Amchur)
 2 tsp Coriander Powder
 1 tsp Cumin Powder
 1 tsp Fennel Powder
 ½ tsp Grounded Black Pepper
 Salt to taste

2. Firstly, Peel the skin of the potatoes and cut into round Katli shape, make sure the potato pieces are equal in sizes for even cooking. Then wash the chopped potatoes.

3. Heat 2 tbsp oil in a pan/wok and add 1tsp cumin seeds to it.

4. Add 1/2 tsp mustard seeds and a pinch of Asafoetida (Heeng) to it.

5. Add chopped potatoes to it and mix them well.

6. Cover & cook for 10 mins on low flame. Stir it 2-3 times in between.

7. Then add 1/2 tsp Turmeric powder and 1/2 tsp Kashmiri Red Chili Powder to it.

8. Add salt to taste and 1/2 tsp dried mango powder (Amchur) to it.

9. Now add 2 tsp Coriander powder, 1 tsp cumin powder, 1 tsp fennel powder and 1/2 tsp grounded black pepper to it.

10. Mix them well, making sure that all the spices are well coated on the potato slices. Cook them for 2-3 more minutes on medium flame.
